Quick menu dump from this week:
Wednesday night- I added cumin, garlic, chili powder, and salsa to some leftover rice, then mixed it with the leftover chicken and peppers (and more cumin). That became burrito filling for dinner. I had it as filling with salad, DH had it in a traditional flour tortilla wrap with cheese and lettuce and sour cream.
THursday- I had thawed out some boneless, skinless chicken thighs but the day went sideways and time got away from me. The Little Guy was here for overnight so we ordered individual pizzas.
Friday- We went to a friends house for supper- there were 9 of us- and supper turned out to be pizza! It was very different- and much better- pizza than we'd had the night before, with salad, the majority of the veggies having come from my friend's garden.
Tonight... the chicken that was supposed to be for supper Thursday. It's marinating in Lowry's herb and garlic marinade. Don't' know if it's going to go on the grill, get baked in the oven, or pounded and either made into chicken parm, or sauteed with onions and an orange "sauce" (pan juices from cooking, sauce won't be thickened or anything).
