Western Caribbean- Opinions on possible excursions

Would like to get some opinions on some excursions that may be available at booking. Considerations: It's me (39) and my 75yo dad (reasonably mobile & active. May need to take a break every couple of miles if walking a lot). We want to experience at least some cultural immersion in at least one port. We are stopping at Cozumel, Grand Cayman, and Falmouth. Falmouth, we are giving serious consideration to just staying in the port area (if we even decide to get off the ship).

Here are the possible items we're considering:

Cozumel
A Mexican Winter Holiday and Beach Adventure (CZ92)
Cozumel Ruins, Chocolate and Beach Break (CZ80)
Best of Cozumel: Honey, Chocolate and Tequila Experience (CZ81)

Grand Cayman:
North Sound Mangrove Cruise & Star Fish Point (G70)
Starfish and Mangrove (G74)
Independent exploration of the area (so far it says guests ashore at 10:30 & all abourd at 5:30, which is less time than at any of the other ports)

Leaning more towards the independent touring for Cayman (trying to figure out the difference between those two excursions as well beyond price differences and one offering snacks).

We are also open to third party options for Cozumel. TIA for all of your opinions.

Cozumel--we did the ruins, chocolate, beach break and really enjoyed it. My goal was to see some Mayan ruins, so this fulfilled that goal. It's a good bit of walking over uneven surfaces, but probably not 2 miles total. It rained while we were there which actually did keep the mosquitoes away. We also had a brief stop at the honey place to shop, then on to the Mayan Cacao company and Playa Mia.

Grand Cayman --we did on our own. Walked to the public bus depot and rode it to the Turtle Centre. After that, got on another bus to see Hell, then another bus back to the depot. We stayed on the Route 1 yellow/west bay route. Every time we got off the bus, it's cost $2.50/person.

Falmouth, Jamaica-- we did the Greenwood great house tour --very enjoyable. Learned some history of the area, stopped at an old church as well as the house. Great half day tour, felt very safe on the tour last summer. Your dad might enjoy the house tour with all the antiques in it. The Greenwood great house has its own tour guide and she turned on the player piano for us. You do go up and down a couple sets of stairs, but that's about it as far as being strenuous.

We're doing Greenwood this summer. I've only read positive reviews of this excursion so glad to hear you enjoyed it as well! I thought it would be great for a bit of history and liked it is a half day after we have two long port days before.

We're also doing the San Gervasio Ruins in Cozumel but we're doing a private tour with Leon Tours. They will also take us to one of the snorkeling beaches where we'll have lunch and snorkel. In Cayman we're heading out with Stingray Sailing to visit Stingray City and an additional snorkeling stop. I liked they are a smaller group and seem to be more conscious and careful with their interaction with the rays.
