Weekend trip during F &W festival

I'm planning a solo trip over a weekend with either taking a Friday or a Monday off of work to make it a 3 day weekend my birthday falls on the Saturday so I was planning on leaving Friday morning and heading into Epcot on Saturday. The F&W festival is on and I thought this would be a busy time to take a weekend trip with a Saturday at EP so should I leave Sat go into another park that day and do EP on Sunday and head home later on Monday? We did a long weekend last year over Columbus Day (plus it was race for the taste that weekend too) & we didn't have any problems @ Epcot. I think Epcot can handle the crowds better than the other parks.

I assume you are going to be focusing on the food & wine and not be trying to get in all the rides? If so, then you'll have a fantasitc time. I think the longest wait we saw was 15 or 20 minutes for some of the really yummy stuff.
 
For the past three years we have done a weekend (1 Saturday, 2 Sundays) and a weekday (all Wednesdays) at the IFWF, and while we can tell the difference in crowd levels between the two, Epcot can handle it very well. Saturdays are a little less crowded than Sundays, except toward evening, as some of the local visitors begin thinking about work on Monday.

I actually am planning on going on the rides, Soarin is one of my favorite rides so I was planning on getting there first thing getting a fast pass for later and jumping on the stand by line and getting on the single riders line on test track and then strolling around the countries going in the shops(something I don't get to do much with the family). I don't think I'll be eating too much at the stands because too many different foods will bother my stomach and I'm not a wine drinker. I was mainly going because it's my b-day and its my fav. park and if they have the eat to the beat concerts maybe I'll catch some of that. I've never taken a solo trip before but we are'nt going on a family trip this year and I have miles for a airline ticket and a free birthday ticket it would be a cheap trip a chance to get my disney fix.
