Weather--what clothes to pack?

We are doing the 7 day land/sea beginning January 29. 3 nights in the park and 4 nights on the Wonder. How should I pack? Will it be warm in the park or should I pack cool weather clothes? What about on the ship? This is our first ever cruise and I'm panicking that I'm going to pack wrong!

We have gone several times at the end of January, and being from Iowa, it has always been a heat wave to us, so I typically pack all shorts and warmer weather clothes. We wear jeans on the way down, so i take an extra long sleeved shirt for each of us in case we need it.
 
Well, today is January 7th and it is currently (6:54am) in the 40s. It is supposed to warm up to the mid to upper 60s. I wear long pants and sweater or coat depending on wind.

I leave tomorrow for a 3 day wonder and have read that we will probably have rain. Usually the weather forecasters are wrong, I sure hope they are wrong this time. Packing for this cruise is a nightmare. I probably will bring one suitcase for warm weather and one for cool/cold weather with rain gear thrown in. :(
 
We were on the 19 Jan Wonder last year, and the cruising weather was in the low 70s as a high. I had one pair of jeans, and one warm up suit for each of us, plus about 3 sets of shorts outfits. I wish I would have packed an additional set of jeans. We also needed light jackets. When we got back, it was 28 degrees in Orlando! Last year was unusually cold though. I'd suggest starting out the way I did above, then checking weather.com for the long range forecast before you go. If the forecast is colder than normal, throw in that extra set of jeans/sweatshirts.

In '01 when DH and I took our 25th anniversary trip, we spent 4 nights at Disney then a 7-night Magic cruise. During the day it was shorts and t-shirt weather, but at night it got chilly. We took jeans and sweatshirts and I remember e-ticket night at Magic Kingdom I would pull my hands back up inside the arms of my sweatshirt and was wishing I had brought gloves!! You could see your breath, so it was pretty cold, but we still had a great time riding the rides.

On the cruise it got warmer each day. I remember shopping in St. Martin I was too warm, even in shorts and t-shirt. We did take jeans and sweatshirts for the late nights up on the top deck "star gazing" though.
