If the DDP is important, you could use the QSDP for part of your stay to manipulate the overall total cost. Just decide how may TS credits you really want, and then do that many nights in the first part of your stay, then get the QSDP for the second part of the stay. I am suggesting the DDP for the first part of the stay, since your dining credits are good until 11:59PM on the day you check out, which allows to stretch out the credits for an extra day.
I would have to say that I like Missy's idea for your family. Buying one PAP is going to cost you an extra $300, but then it allows you to buy a TIW for $100. The TIW will give you a great deal of flexibility with regards to how much you eat, when you eat, and where you eat. Most people find that they spend less money with TIW than with DDP, and this would probably be the case for you now that your kids are "adults". By 2014, the DDP may be close to $60/day for the adult plan -- that's $240/day for your family to eat. You can probably do better than that. TIW definitely beats out DDP at the signatures, where you have to use two TS entitlements. And don't forget, the TIW works at the QS location at AK. The other thing to keep in mind about buying the TIW on 5/31/2014 is that it won't expire until 6/30/2015, so you may be able to get another trip out of it if you go in early June every year! Then you could just get four 10-day PH+WPFM in 2015 and not have to pay for the DDP for that trip, since you will already have TIW.
If DH likes DDP because it is pre-paid, then I would suggest buying 3-4 of those Target Disney gift cards for each day of your trip and use them for your dining costs. That would make it feel like it is pre-paid, but you would probably end up spending less than if you got the DDP.
