WDW During Off-Season - Where Do You Linger When You Have Lots of Time??

We're going from 1/1/2005 through 1/9, and I'm told this is about the slowest time at Disney. I've tended to be a Park Commando in the past, going in busier times, paying for a party of from 5 to 8 adults, so I've tried to cram in as much Magic as possible. This time it's just the two of us on the longest stay we've had. My question is, where do you spend time when you've got a lot of time to spend? We'll still be doing the big ticket rides and attractions, but we won't have to rush. What have we missed in the past by not taking the time? I particularly feel that Epcot has more to offer than we've experienced in 6 or so weeks at WDW, but I'm interested in all the parks and the little pleasures we Type-A folks miss in a 'busy' Disney vacation. Any tips from those who stop to smell the roses?

Maybe you could do some of those behind the scenes type tours! I would love to do that but never want to take the time!!
 
Spend time in each country at World Showcase. Look for all the details you might have missed. Look in all of the stores too; there are a lot of cool things.

Stroll through the trails at Animal Kingdom.

Take some time one day to play miniature golf.

Resort hop.

Book a service at one of the spas.

Spend some time in the Living Seas.

Cirque du Soleil.

Carriage ride.
 
I'm for the resort hopping. . . and try to do it by only using Disney transportation. . . it makes it more fun, IMHO. We're doing resort hoping on our next trip (we've done it a couple of times on past trips). You MAY still see some Holiday decorations at the resorts, too -- I'm not sure when the official "taken down" day is, though. We're going in early Dec and we want to hit the resort BECAUSE of the Holiday decorations. Though, even without Holiday decorations, just walking through the resorts is amazing. . .
 

Rent bikes and hit the trails at FW. Stop in at Crockett's Tavern afterward for some refreshments and chicken quesadillas. Relax in rockers on the porch.

Epcot--enjoy the museums in China and Japan. There are some neat warrior costumes and bridal costumes on display.(I think the movie in China has been redone.)

Spend the morning at DD boat to POR--rent a surrey bike--we enjoyed the surrey bike more there than any other place. Be careful going down the big hill--keep your brake on and hold on to your wallet--son's wallet fell out there. Spend sometime walking around POR and even take the walkway over to to POFQ. Take the boat back to DD and have some ice cream at Ghirardelli.
