WDW Dinner Shows?

I am taking my mom to WDW in Sept for her birthday and decided to book both Hoop Dee Doo Review and the Spirit of Aloha Luau for her. We have the free dining plan, but due to her diabetes and needing to eat three full meals/day I will be paying out of pocket for some meals. Since they're two credits each, the two dinner shows will be paid for OOP. Anyway after reading reviews I'm having second thoughts. Are these two dinner shows really worth the time and money? and would you do both (three days apart)? I booked them April 3rd and have heard that seating is according to when you book, so wonder what kind of seating we might get and if we got there early if it might help get us a better seat.

Another question: We are thiniking about taking food for some quick, easy breakfasts in the room. Any ideas for foods that would be quick, easy, and good for keeping a diabetic's blood sugar up until lunch time.
