Here is a recipe my mother passed on to me!!
watermelon rind
salt
2 cups water
3 cups vinegar
9 cups sugar
2 dozen cloves
1 stick of cinnamon
1 large bottle of marachino cherries
Peel and slice watermelon rind. (the thicker the rind, the better!!!) Put in salt and water (2T salt for each quart of H2O) Next morning drain and boil in fresh water until clear.
Mix water, vinegar, sugar, cloves and cinnamon and boil 5 minutes. Drain pickles and make sure they are very dry. Then boil in above syrup for 5 minutes.
Each mornng for 4 mornings drain off syrup and boil for 2 minutes. Then pour boiled syrup on pickles.
Before canning add 1 large bottle of marachino cherries and their juice.
Water bath 10-15 minutes.
