Want to add new experiences this trip

I second the AP suggestion. Or at least run the numbers and check resort discount and dining discount option with TIW purchased as an AP holder. Only one of you needs the AP to get the discounts. You did say 4 weeks, right? Other fun, different things... Look at the stable before Hoop de Doo. Your kids may be too big for a pony ride,depends on height, but horses are still fun to look at. fort Wilderness also has archery lessons. I have not tried them, but they sound fun! Wagon ride at FW and fishing both fun!
 
Three things you can do that hasn't been mentioned here are:

1. Take a Carriage Ride at Fort Wilderness. It's about $50 or so and is a relaxing way to enjoy an hour away from the campsite.

2. See a movie at the AMC Disney Springs Dine IN theaters. A movie theater where they serve you food is an experience that many communities don't have.

3. See some of the small cities in Florida. I spent a day in Fort myers at the beginning of the Universal trip last year and it is a great small city. It's a couple of hours from WDW.
 
I would recommend the Pirate Adventure for your 7&5 year olds. Our kids did the one from Caribean Beach and they had such an amazing time.

We hit SeaWorld every trip and Busch Gardens as well the last couple (this last trip we dumped US)
