VKL and Q & C Meal Vouchers

I was organizing my meal stuff today and thought of a few questions. Are you supposed to sign them before you go or do they need to be signed in the presence of the server? What are you supposed to put on the value line, or do the servers fill that out at the end of your meal? I know someone suggested writing at the bottom to please ask for ID, is that recommended? We used both types of vouchers on our trip in June. The servers have you sign them and they take care of the rest. Have a great time!
