My sister and I have Victoria and Albert's booked for our upcoming trip and I was wondering if they still call to confirm the reservation/dietary needs or if I should call them.

My sister doesn't eat any fish and I do not eat veal and I wanted to be sure they have this information. If they still call when should I expect their call? A week before? A few days before?

They should call you, but you can certainly call them.

If you call today, they'll make a notation about your preferences. Then, they'll call to confirm those preference when they typically call....a few days or a week before your ADR.

FWIW, you can each select options from the Vegetarian Menu in place of your listed preferences. Or, you may select other options on the 'Regular' Menu that same evening. More simply, you are always welcome to mix'n'match from the entire menu. For instance, you can have any fish instead of veal. Your sister can have any meat instead of fish. If the item is an 'upcharge', that does not change.

Over the years, the only special request we made, besides mixing'n'matching, was having a warm custard beneath the freshly shaved truffles. Some/most 'purists' recommend eating truffles at room temperature, but we enjoy the aromatic of having them shaved over something warm.
 
I would suggest that YOU call THEM - for an odd reason....

You will be at WDW, enjoying the Parks. V&A will absolutely try to call you. And the Telephone Tag starts :).
Sandy and I have had as many as eight attempted V&A calls (they DO try). This just gets easier if YOU call THEM between about 1 PM, and 4 PM.... else, you get the dreaded "Tape Deck" - and another call back :).

Now this MIGHT sound negative.... it isn't. V&A is VERY serious about making sure that you have a PERFECT dinning experience. To do that, they just HAVE to talk with you :).
 
I usually tell them about food allergies when I book but they always call a week ahead of time just to confirm that we're still planning to come and any other information. I've also had experiences (before I knew you could call about food allergies) where I said that I couldn't eat seafood and they made modifications on the spot. But it's always best to let them know early so that they can custom design a menu which they often do. Then, if they need other ingredients, they can have them on hand.
 

I would call to prevent the dreaded phone tag but they do call to make sure allergies and preferences are accounted for. They do a great job with taking those requests seriously. When my husband called for our reservation, he noted that I don’t like eggs with runny yolks and they just put down that I couldn’t have eggs. I clarified after our waiter confirmed what was written but he still made sure anything that could be iffy to be served separately so I could enjoy the course right from the start.
 
I was home when they called for the "long" conversation about preferences and allergies. It was very thorough and I appreciated the call.
Yes, they do call to confirm the reservation the day before as well. We return the call when we can find a quiet spot.
