Recently became a DVC member. In looking at the studios at the Grand Californian, the second bed is a sleeper sofa. How comfortable are they? Also, are there any plans to change them to Murphy beds at some point?

They are a bit worn, but VGC is in the process of replacing them to the Murphy beds.
If you don’t own at VGC, the chances of getting a studio for multiple nights are slim. Not completely impossible, but close. Even owning there, you could be shut out of studios. There are only 23 studios/lock-offs.
I own at VGC and have never had an issue with studios at 11 months… they slowly disappear leading up to the 7 month mark… anything left starts disappearing quick during the 8th month.
I’ve had pretty good luck booking VDH PAST 7 though… even got 2 nights at 3 days once.
I am going on a work trip the 24-27 of this month out there so I’m staying a couple of extra nights to go to Disneyland. I booked the 27th through the 29th at the Tropicana across the street…. Because there was no DVC available…. I’m still keeping my fingers crossed that something pops up and I can cancel the Tropicana…. I got a little bit hopeful because I saw a few rooms pop up for a week earlier than I’m going at VDH yesterday… all but one are gone now. But I’m gonna be stalking the website. I would take pretty much any studio at VDH or vgc.. just hoping somebody has a last-minute cancellation.
If not The Tropicana is actually closer than the Disneyland hotel… but it’s not as nice and it’s not on property. I’m staying at VGC at the end of April… so I still get to stay there.
I did actually get a two bedroom at the grand California for one night just a couple of days before my stay once.
