Well, since it is a holiday weekend, it will be more busy than normal for that time of year- but November (aside from T'giving week) is not a busy time of year. It will be MUCH less crowded than summer, Spring Break, or the big holidays.
In addition to Veterens' Day, there will also be lots of NJ folks there- the NJ Teachers' Convention is that week, and NJ schools have half of that week off. Super Soap Weekend will be going on at MGM as well, and the Festival of the Masters (an arts and crafts festival) will be going on at DTD. So, it will be pretty busy for November- but still very manageable.
Make a plan of which parks you want to do which days, and get going early. You should be fine- we went during "Jersey Week" and Veterens Day weekend last year, and we only waited longer than 15 minutes once- Kilimanjaro Safari in the middle of the day. We could have gotten a FP, but we decided to do standby, since it was the last ride of ther park for us. We waited 40 minutes.
