Vero Beach with Young Kids Christmas Break?

Hi there! We are thinking about shifting our October WDW trip to a Christmas Break Vero Beach due to COVID. My kids are 8, 4, and 2 and my 2 year old uses a wheelchair. What is the weather like that time of year? Is there enough to keep young kids busy at the beach and around the resort?
 
It will be cool at the beach. The Atlantic is colder than the Gulf of Mexico.
 
We are owners at VB and really love it there. However, we do not go during a time of year when the beach is not in play. For us, that would be anytime from Nov through March. Of course, we live in FL so probably like the water warmer than most but like a previous poster mentioned, the Atlantic is cooler than Gulf (where we live) and even when we have been in late April it can be a little on the cool side. In our opinion, the focus of VB resort is the beach of course. Pool and grounds are very nice but not a ton to do around there that doesn't require a drive which is unlike Hilton Head for example. Just depends on what you are looking for in the trip.
 
As well, please note the following posted on the Disney Vero Beach page: " From late September 2020 through late November 2020, the Vero Beach Feature Pool, Tiger Lily Aquatic Play Area, Pirate’s Plunge Pool Slide, Port Holes Miniature Golf, Playground, Pool Area Restrooms and the Whirlpool Spa will be unavailable due to refurbishment and maintenance. Our beautiful sandy beaches and other recreation activities will remain available for your enjoyment."

With hurricane season in play until the end of November (September and & October tend to be peak months for storms) - it's possible that their current refurb could be delayed and run into December or even 2021.
