We will be staying at VB for 3 nights after our cruise next February.
We have 100 points available on one account. Need 111 for 3 nights.
Question... Can we use all 100 then the 11 from the other account or do we have to use 2 nights points on one. 1 night points on the other??

It sounds like you have two different membership numbers. Technically (by current policy), if you want to use points from both accounts to book that 3rd night, you must do a transfer from one account to the other and then book all three nights from the same account. Otherwise, you can book 2 nights from the "100 point account" and the 3rd night from your other account, and then ask MS to combine the 2 reservations into one reservation. However, unless something has recently changed, you'll have to get new keys between the 2nd and 3rd nights when you book that way.
You only get one transfer per use year for each account, either into your account or out of it, but not both in the same year. So transferring between you accounts would use up the one transfer per use year for each account.
Now all that said, MS is reportedly allowing "unlimited" transfers between accounts if they are titled the same and you are making a reservation that requires points from both accounts.
I'd go the transfer route if possible - you get one continuous reservation and no need to visit the front desk to get new keys in the middle of your stay.
Your trip sounds like a lot of fun!
P.S. If you have one membership number for both accounts, then you can combine the points without doing any type of transfer. Both MS and the online system will allow you to choose which points to use. For example, the online system will list both "accounts" and ask you the order in which to use the points. In this case, no need to get new keys in the middle of your stay. What you really have in this situation is a Master contract with an add-on contract. The Master contract has a number like xxxxxxxxx.000 and the add-on contract has xxxxxxxxx.001
