I enjoyed the vegan Korma dish at the land (Asian station) earlier this month. It had Gardein chickin' in it, veggies, rice and wasn't really spicy.
The new Harambe market in AK has a veggie stack that was pretty good. It was portabello mushroom (which isn't my favorite but not bad), squash/zucchini, arugalla and then a chickpea salad.
I 2nd the Vegie platter at Tangerine Café in Morocco (I got 2nds on lentils instead of the tabouleh)
and agree the Fried Green Tomato sandwich at Rosie's at Studios is great.
