Boardwalk Bakery - grilled veggie panini
Epcot Electric Umbrella -- veggie wrap (pretty good)
MK Cosmic Ray's -- veggie wrap (not as good as above)
Epcot American Adventre -- veggie wrap (I haven't tried this one)
MK Pinnochio's -- pizza and salad
Epcot Sunshine Season -- sooo mmmaannny choices -- veggie lo mein, stir fried veggies, veggie fried rice, cuban veggie sandwich, numerous salads, fruits, and usually one soup with a pure vegetarian base (no meat stock)
DHS Pizza Planet -- pizza and ceasar salad
DHS Backlot Express -- grilled veggie sandwich

We've had great veggie meals at these TS:
Tusker House
Spoodles
Cape May
Crystal Palace
Chefs de France
San Angel Inn
California Grill
Rose and Crown
Mama melrose
Brown Derby
50s prime time

In some cases we chose the vegetarian option on the menu, in others we spoke to the chef and they made something with ingredients we liked.

Thanks for that quick list! :thumbsup2

As a vegetarian, my favorites are (in no particular order):
Boma at AKL - so many choices

San Angel Inn at Epcot - nothing on the regular menu, but if you ask your server, they have a small vegetarian menu (only two choices, but the combination plate is yummy)

Teppan Edo at Epcot - nothing out of the ordinary if you're used to hibachi Japanese food, but it's a family favorite

Ohanas at Polynesian - again, nothing on the regular menu, but if you note on your reservation there's a vegetarian in the group, and then remind them when you get there, they tell you what side dishes are vegetarian, and prepare a special entree. Three out of the four times I've been, it was one of the best meals I've had at Disney ever (it was the same dish all four times, but the last time I was there it did not taste the same and was very salty and not good)

Brown Derby at DHS - The wok-fried coconut tofu noodle bowl...I get it without the mushrooms because I'm not a mushroom fan, but it's quite good.

El Pirata Y El Perico at MK - not open all the time, and when it is open, it's only open at lunch time, but they have vegetarian bean tacos and a taco salad that in the past I've been able to have them sub the meat for beans. Nothing super special, but I find it better than the veggie burgers on property, so it's one of the better counter service vegetarian options when it's available.

Columbia Harbour House at MK - another good veggie counter service option with the lighthouse sandwich and the vegetarian chili.

Crystal Palace at MK - I've only eaten here once, but was surprised by the number of decent vegetarian options on the buffet.

Note on the veggie burgers at various counter service around the world - they'll do in a pinch if everyone else wants to eat at a particular place, but really NOT my first choice. As said earlier in this thread...they are just frozen and reheated in the microwave. I've had them range in taste from ok to downright gross. Once at Pecos Bill it seemed like the burger and bun had been frozen together and then microwaved together so the bread was all dried out and stuck to the burger when I tried to take it off to adding toppings. I barely ate half of it before throwing it away it was so gross. I generally have better luck at Cosmic Rays, but still...it's not the most awesome tasting veggie burger ever or anything.

Sunshine Seasons at Epcot - has a lot of choices, but from my memory at least, most of them involved mushrooms, and whereas at a table service you can usually request something like that left out, counter service you're pretty much stuck with things as is. It's been a while since I've eaten there though, so things may have changed. It's worthwhile to check out though because they have many different kinds of food.

You can check out these pages that have a pretty good listing of the vegetarian options at counter service and table service:
