Vegan meals?

We'll be at Universal on November 2nd (one day out of our trip to WDW), and we are vegan. Any ideas about where we might eat lunch and have a good vegan meal?

I've looked at the menus and there were not many options. Some looked like they might be vegan but I couldn't tell from the menu. So I was wondering if anyone knew about actual vegan dishes, or if anyone had done a vegan special order/request?

You can call the head chef, the number is listed on the food sticky. He'll be able to give you more details about park food.

At Citywalk, we have had a few people remark about Bubba Gump's and how good they were about vegetarian and vegan food.
