Vegan dining in WDW?

I suspect this isn't a very common question (or maybe it is) but how easy is it to get vegan (strict vegetarian - no dairy/eggs) food at WDW? I've read the Vegetarian Disney guide, but it honestly wasn't all that helpful. It made it out like you had to call and plan out your meals with the chefs every time ... which to me seems like a whole lot of work, when half the joy of eating "out" is not having to plan. Obviously just ordering off the menu won't happen, and calling ahead to specify vegan meals is a must, but do I really have to spend half an hour on the phone with a chef just for a simple dinner somewhere that isn't plain pasta? I don't mind planning special meals, like at V&A, but every night???

And I'm not really worried about breakfast or lunch, we'll probably just Pop Tart and veggie burger/fries those meals most days. It's only the sit-downs I'm really concerned with. But any recommendations on good places to hit would be much appreciated (all meals, just in case there's something great we shouldn't miss!)

Me (vegan) and my boyfriend (vegetarian) are going this September, so I've been reading up a lot on this! Apparantly, non-dairy ice cream is pretty easy to come by! I've read of people getting it at the Plaza Ice Cream Parlor in the Magic Kingdom, and at the 50s Prime Time Cafe at MGM. So I'm really excited about that!

Also, when we made our ADRs, the cast member I was talking to noted that we were vegan on each one, so I'm guessing the restaurants see that? Nevertheless, I think I'll be fine everywhere except the Liberty Tree Tavern character dinner (MEAT CITY!). So I'm calling ahead on that because I want it to be a really good experience. And, from what I've read, most table service restaurants should be able to customize certain menu items without futher notice. But, like I said, since I want LTT to be a really good, carefree experience, I'm calling ahead. But I'm not really worried about our other ADRs, like 50s Prime Time Cafe, Sci-Fi Dine-In, Tony's.. I think those should be fine. I wouldn't call the chef unless you were really concerned about something or had your heart set on something while you were there.

I have a chart of table service restaurants (also CS and snacks) with vegan options that someone else on here sent me through e-mail. I could forward them to you, if you'd like. They were really helpful to me.

The search engine on the boards is really helpful, too. I just typed in "vegan" and got loads to look through! :)
 
Run a search for "vegan" and you'll find quite a few threads on this already.
