Using meal vouchers at Cindy's? Need bkfast advice...

How do you use vouchers now that they require a deposit when making PS ressies? Is the Princess bkfast at Norway in Epcot better? I'm wondering if we should do the Princesses in Norway, then the Cinderella dinner at the Grand Floridian? Where is the best food and service? I like the thrill of eating in the castle, but could do without. The trip is for DD to become aquainted with WDW, at 1 yo. Would she even notice the difference? Oyyyy, so many decisions...
