I am thinking that a December UY may be the best month for us but I would appreciate your expertise on this one. Please let me know if the following scenario is right.

The only time we will be able to travel are:

March for 1 week

July or August any time

December for Christmas Holidays

I am thinking a December use year would work because it would cover a December or March trip and I could bank any unused points by August 31st of that year so we could also do a summer trip and then bank any leftover points.

Does this make sense? Did I get the August 31st date right?

I was originally going to buy a February use year because the kids like to travel during our Spring break but I also want the flexibility of having December open and I think that with a February UY the points have be banked by November 30th.

December UY is best for the first 8 months of DVC stays, December through July.

December is a good use yer given your travel times.

Even though the banking deadline is July 31, a December use year will still cover August vacations. That's because if you don't cancel at least 31 days prior to arrival, the points are returned to you in holding status. That means they expire at the end of the use year, (cannot be banked) and can only be used to book a stay that is no more than 60 days away.

Understanding Use Year

December use years are arguably the most difficult to understand for a newbie. After you've made a few charts for yourself (as described in the above link), you'll soon become very confident of your ability to get it right. :)
