Sure...you'd just pay the difference. Guest Services can handle that for you..if you already have the tickets.

Is there a Guest Services outside of the park where we can do this? We're planning on picking up our pre-purchased 7-day tickets one evening, but not entering the park, and I need to upgrade just one of them to an AP.

Yes. There are guest services outside both parks but they are only open when the parks are open (and a bit earlier).
