Unique options (fee or free)

I am taking my two girls (8 and 6) and my wife in early December 2016. Staying at GF again. We have done the princess thing and know all about the rides/shoes/parades. I am looking for suggestion about "different thing", I've seen speciality firework cruises (worth it?). What else am I missing?
