Understanding the DDP

My family and I are going to WDW November 25-December 7, 2016, staying onsite the 27th-7th. When we go to a TS that is not a buffet/AYCTE, can I specify how I want to pay? For example, at restaurant A I would like to use 1 adult credit, 3 child credits, and the rest OOP? I understand that I will be charged for all buffet/AYCTE restaurants regardless of what I eat.

Also, my 10-year-old will probably not eat off the adult menu, but she could surprise me. If I order a kids meal for her sister and she does not eat it, can she eat her sister's child's meal and not order an adult meal or is that against the rules? Will they make her a bigger portion of a child's meal? I foresee our youngest daughter and I sharing a lot of meals :(

The reason I ask this because I had weight loss surgery a year ago and I do not eat much. In town, I usually share meals with my 4-year-old who doesn't eat much or I just order an appetizer or soup/salad. Any other ideas on how to maximize our credits? I have booked extra TS meals since I have a feeling we will have leftover credits :)

I am trying to understand how all this works... so please bear with me :) When we went in 2014, we all ate "normally" so this all new to me :) I am not trying to break any DDP rules or do something illegal.
 

I looked at changing discounts and it is not worth it and will cost us either more money or value accommodations :(
 
Just remember that with TS meals, the kid's credits can only be used for kid's meals. It looks like you have an equal number of adults and kids, so you'll probably be okay, but keep up with how you use the credits, so you don't end up somewhere with just kid's credits left.

QS meals are now interchangeable, at least in practice. You can order all adult meals if you want.
