UN and IOA in December - couple questions

We are headed to Orlando for the two weeks after Thanksgiving week. We were planning on hitting Disney that first week and UN/IOA for a couple days the second week. So, is there a big difference in crowd levels for the first vs/ second weeks of December? (we were just there in september and the crowds were nonexistent - we were spoiled).

Also, does anyone know how late the parks will be open those first two weeks in December. I assume it is low season (?) and in September (also low season) the parks closed at 6pm.

We didn't catch any shows at at Universal (we did see Pois. Fury at IOA) this last time. Which of the shows would do you experts recc. for us as a family with a 4 and 2 year old along? Does Fear Factor show everyday? That might be fun to sign my husband up for if the lines aren't terrible? How does that work?

Early December is pretty slow so the crowds won't change a lot from the first and second weeks.

The parks will probably close at 6pm again for most of December until Christmas week.

I'm not completely sure about FF but I know you have to get there way before show time to sign up...if you want to be in it.
