The best thing about Paris is that both parks are a stones throw from one another (literally around 1 minute walk from entrance to entrance). You can flitter between the parks as and when you wish which is really helpful. Use the app to keep an eye on wait times and don't be afraid to bail out of one park into the next if a popular attraction like Crush's Coaster / Peter Pans Flight has a low wait time. It isn't like in Florida where you need transport from park to park!
If it's your first trip i'm sure you'll be wanting to see the parades, fireworks, shows etc but once you have done that and unless you have a burning desire to watch them again make the most of those periods and jump on some rides. The parades in Paris really do eat up a lot of the crowds with people watching so you generally find lower wait times around those periods. Also i don't know if you're staying in a Disney hotel but if you are make sure you milk those extra magic hours (early access to the park before they let all other guests in) to get photos, get in the queue for rides, grab some food etc.
Also the food can be crazily expensive there! It wouldn't surprise me if you ended up spending 60 euros for the 3 of you to eat at one of the quick / fast food style restaurants within the park. There are other options just by the park entrances at Disney village such as McDonalds, Five Guys, Starbucks which are all cheaper than the food available in the park. I would recommend Earl of Sandwich; me and my partner basically lived off the sandwiches from there for our stay! Although, for the little one, these places are obviously not as themed or interesting as eating in adventure land or fantasy land!
