How do you use these companies to drop you off at the parks? I'm confused about how they get past the toll booths to pay for parking. Can they drop you off near the park gates or is there an area dedicated to pickup/dropoff?

If you've used these companies, any thoughts on how long to plan for pickups? Is it hard to get a ride at the end of the day when the parks close at 9pm?

There are free drop-off/pick-up locations at all of the parks.
Anyone can use them.

At MK, it would make more sense to drop-off/pick-up at the Contemporary/Bay Lake Tower
and walk to/from MK gates.
Otherwise, the MK drop-off/pick-up is at TTC/MK parking lot area.
 
We use them a lot, but never at the end of the night. We always use buses then. We do use them in the mornings a lot. Availability is great. There are a lot of drivers in Orlando.

AK has the best drop off of all, right there at the gates, next to trams stops. The others are a bit a walk compared to buses but not bad.
For MK we go with Minnie Vans usually, since they can go to Bus Stop 11. But if we do go with Uber/Lyft we do either CR and walk or GF and hop the monorail, since it's 1 stop from there. Feels faster than TTC but it may not really be.

Yes for Uber/Lyft, it's no different than anywhere else in the world
Minnie Vans, I think so. We were established Lyft users well before Minnie Vans came about so we didn't have credits. I've read others did use their credits though

Yes, you can use sign-up credits.

But before you sign up, be sure you understand the limitations. Sometimes sign-up credits are geographically limited to the market where you sign up. They may also have time limitations -- like only good for a month. If you see restrictions, you'll have to decide whether you are better off signing up at home or when you get to WDW.

The MinnieVans operate on Lyft's app, so that's what you would use for MV.

I always recommend everyone have both Uber and Lyft apps on their phones and compare pricing and availability before you request a ride.
