We too were leaving for FL exactly two weeks from our service date. We got our vouchers exactly a week after the volunteer date. (And we leave for Florida this Saturday! Woo hoo! Visiting family so a one-day trip to Disney will work out great. They have AP's so it's win-win for all of us.)
My fallback position was to check my emails while we were down there and print out the vouchers that way if we had to. But I haven't heard of anyone on this site having to wait the full two weeks, so you should be OK.
