I don't use a recipe for much of anything, but this is what I do.
I just bake the potatoes, cut the top off to scoop out the inside. Mash them with a fork/potato masher (or mixer if you're using a lot - I just never make enough to bother), butter, Parmesan cheese and either a bit of warm chicken broth or milk warmed in the microwave. If I have bacon left from breakfast, I'll crumble that in as well. If you have chives, they make a nice garnish. DH likes chives in the mashed stuff, but they make me itch.
Stuff the potatoes with the mix & put back in the oven. I think my mother used to top with butter & paprika (for color) & then broil a minute. I don't bother.
If you need exact amounts instead of "eyeballing it" you could use the recipe for Au Gratin potatoes from Cinderella's breakfast with what you scoop out.
