I really am not a big fish person and I didn't grow up in a home where we had fish very often. I don't really know how to cook it either. I am cooking some of the Gorton's grilled filets (garlic butter) right now and they are 2 pts/piece and I am hoping they are good. I also have found some crab stuffed flouder that is pretty good and it is 5 pts/piece but it cost about $5 for a box of two. Does anyone have any other suggestions for good seafood dishes that are low in points? I don't have a grill yet so I can't just grill it. I would like to challenge myself to get at least one fish dinner a week but I need more ideas if that is going to last.

Thanks!

When I was eating low fat, I would buy cod, I like a white fish, salmon is too sweet for my taste, plus it had too much fat for me. When I go low fat, I really go low fat ;)

I bought the Paul Prudhomme's "blackened redfish seasoning" and sprinkled that on the fish and broiled it on a rack on a foil lined cookie sheet.

I still use the seasoning, I like it. Now I add butter to my fish, though :)

I love to eat fish. www.foodtv.com has tons of recipes and you can search by whatever type of fish you have found. I like to buy fish at Costco and Trader Joes - there is a decent variety and the quality has always been good.

Using the microwave is a quick and easy way to cook the fish. I have some "lemon pepper" that I used this week. MMMMM

I like orange roughy with either some of Emerill's *BAM* seasoning sprinkled on it prior to cooking or a generic cajun spice mix. You can cook it in a pan with some vegetable cooking spray. Just wait until you get a grill though! :) You can buy those special fish grilling containers and the fish will taste so yummy! :)

Hope you find more ways to enjoy fish, Becka! :) If you enjoy Chinese food, maybe you can try searching for some recipes to prepare it that way. I'm sure there has to be an Asian fish soup recipe that is low in points. I'll see what I can find for you! :)

This one sounds good! :) (from cookinglight.com)

This next one says to use the grill, but I'm sure you could modify things and just cook the fish in a pan on the stove:

Honey Mustard-Glazed Salmon with Sweet-and-Sour Relish

INGREDIENTS:

Relish:
1 tablespoon white wine vinegar
1 tablespoon water
2 teaspoons sugar
1/4 teaspoon salt
1/2 cup chopped red onion
1 tablespoon minced fresh parsley
1/2 cup chopped yellow squash

Salmon:
6 (6-ounce) salmon fillets, skin on (1 inch thick)
1/4 teaspoon salt
Cooking spray
2 tablespoons Dijon mustard
2 tablespoons honey

INSTRUCTIONS:

To prepare relish, combine first 4 ingredients in a medium glass bowl. Microwave at high 30 seconds or until sugar dissolves. Cool. Stir in onion, parsley, and squash. Cover and refrigerate 1 to 4 hours.

Prepare grill.

To prepare salmon, sprinkle fillets with 1/4 teaspoon salt. Place fillets, skin sides down, on grill rack coated with cooking spray; cover and cook for 9 minutes. Combine mustard and honey in a small bowl; brush over fillets. Cover and cook 2 minutes or until fish flakes easily when tested with a fork. Serve with relish.

We spent 2 years in the pacific Northwest and just fell in love with Sockeye Salmon- but any kind will do- it's easy to cook- you can usually find the filets for cheap at Costco... I just take the filets and sprinkle some salt, pepper, and dill on them and broil them on both sides for 3-4 minutes- it really doesn't take that long- you want it to be flaky and done- not gooey in the middle.
You can also use some sour cream, dill, & lemon and make a nice topping for it-- check out www.allrecipes.com for some great ideas that have been tried out already..!
Enjoy!!!
