Trying to decide if this is possible

I too think you could have your AK and HS day be two separate 'easy' days, where you could easily spend half day in each and have the afternoon breaks to nap, swim and relax. I've opted to not hop with young kids, but you could make your original plan work as well.
Also, don't discount what rides your 5 year old may like, based off of age. I was absolutely shocked our first visit that my 3 and 5 year olds wanted to go on things I didn't think they were ready for (but both tall enough for), and they ended up loving everything EXCEPT Space Mtn. Especially my 3 year old, I had no intention of her going on things, but decided to let her try them if she wanted, and so glad we did. (She even loved Tower of Terror at age 5). You could pull up you tube videos and watch what the rides are like all the way through and show your child to gauge interest. Just a side thought for you as I see your signature says first trip!
