Tried the recipe using cauliflower. Well.......We did NOT like this!! Now don't get me wrong...we did eat it and I could eat it again but I don't think this is something we will be craving any time soon!!! I guess if you are used to eating instant mashed potatoes then it might be better but if you are used to making REAL hand mashed potatoes then it leaves ALOT to be desired!!Of course JMHO!!!!
 
I agree. I've found that I can't think of cauliflower as mashed potatoes. If I think of it as mashed potatoes then when I take a bite my mouth says, "yuck, spit that out what the heck <i>is</i> that stuff, those potatoes have gone bad."

If I think of it as super deluxe squished up cauliflower containing neat stuff, then my mouth says, "Hey! That's not bad, that's some pretty tasty cauliflower."

I learned years ago when I was on WW that if I made what the WW cookbook called devils food cake and expected it to <i>taste</i> like devil's food cake then my mouth did that little spitting out routine. But if I thought of it as "sort of chocolate and sweet treat" it wasn't too bad.

I think I will stick with Atkins and the cheese cake though :teeth:
 
Oh yes yes yes...the cheesecake!!! I made a cheesecake earlier in the week and we cut into 16 slices. Even my dd loves it. She loves the reduced carb bread also. I figure her eating those can be a good thing. She is almost 6 and for her height she is just borderline from being overweight. While I try not to focus on her weight so as not to send the wrong message and have her develope an eating disorder later,I think quite a bit on how dh and I are eating now can have a positive effect on her.
 
My son was very overweight when he was 8. He went to WW. I often wonder how he would have handled Atkins. Unfortunately, I actually believed that Atkins would kill you back then, so he didn't get to find out.

It couldn't hurt a child to go without sugar and flour, it could only be good for them. As long as your daughter is eating plenty of low glycemic index fruits and veggies, I think it's great that she's not eating white flour.
 

She never has really cared for things like rice but she does love baked potatoes and spaghetti.Although poor dear has not had any home cooked spaghetti since I started Atkins!!! But tonight we had the fried chicken using crushed pork rinds and she loved it!! She also hated the "mashed potatoes". I would't let her watch me prepare them and I thought I could trick her. She called them Rotten Potatoes!!!
 
Oh darn,

I was really hoping that this was going to be a good substitute for me to eat while the rest of the family has mashed potatoes. I will still have to try them out, but at least I know not to tell my brain that they are mashed potatoes!

Yes go ahead and try them!! I had thought about adding some cheese to them but maybe one day I will try them again. If you really like cauliflower then you might like them more than I did. Normally the only way I will eat broccoli or cauliflower is with cheese sauce so that could be part of the problem.
 
There is a Keto brand "Keto Ketato" Potato flavored gourmet mix. It's supposed to make squished cauliflower taste like a stuffed baked potato. Do no believe that for a minute. It makes cauliflower taste like cauliflower mixed with cheese, chives and sour cream. Think of it as fancy cauliflower and you will be fine. Think of it as a stuffed baked potato and you will be ill.

My dh said that adding crumbled bacon to the mixture helped a lot. I won't be spending $5.99 on this stuff again. I can make my <i>own</i> mashed cauliflower better and more cheaply.

BTW, Jenn. There is a recipe for cheese sauce in the recipe thread, I think. My husband loves it. It's the only way he will eat cauliflower but he loves it on any vegetable.

1/2 heavy cream
3/4 cup shredded cheddar
1/4 teaspoon dry mustard.

In a heavy bottomed pot bring the cream to just under simmer. Add the cheese a little bit at a time and stir allowing it to melt before you add more cheese. When it is all melted, stir in the dry mustard.

Makes 4 servings or enough to sauce one pound of cauliflower or brocolli. Each serving contains 1 gram of carbohydrates, No fiber and 6 grams of protein.

It's very tasty :)
 
Thanks for the heads up on the Keto product!! I saw it on Ebay today and was thinking about it. Now I will use my hard earned money on something else!!;)
