Not sure which airline you are using, but if you have any luggage that needs to be checked, the earliest that Southwest allows is 4 hours before your flight.
So, putting together all this helpful information, for a SW 6:15 am flight, I should be able to check my luggage at 2:15 am, then head over to the international terminal to hang out for a few hours? Is that correct?

Since SW doesn't have any red eye flights, they probably won't open check in that early, you will just need to call them and they will tell you what the earliest is that they staff LAX.
So, I'm not the only one who has thought of this! So, there are places to sit in LAX before you get to TSA? Some airports don't have that space. Is there a hotel in the airport? If there is, the lobby would be another good place to wait.
Yup, we decided we could sleep at home but couldn't ride SM or Incredicoaster at home..
There are benches and chairs, but we just honestly sat down on the floor leaning against our bags.

No. Southwest will likely not have a desk open that early. If they did, you should just hang out in the Southwest terminal. SW goes out of terminal 1 which is the only one not connected to any others and it's far from the international. Having checked luggage certainly makes it more complicated.
