If you already have your stuff with you when you leave the MK, just take the 'rail to the Contemporary, and catch the DTD/TL bus from there. It's the same bus that services the Poly, but you're more likely to get a seat this way. Otherwise, you can go back to your room at the Poly, and catch the bus there. (Do not go to the TTC... no buses there)
From TL to WinterSummerland... take the bus to Coronado Springs. When you get to Coronado Springs, exit, and transfer to the Epcot bus. Make sure to let the driver know that you will be exiting at Blizzard Beach. (If an AK/BB bus shows up, you can board that one first, but depending on the time, the AK/BB buses might not be running. The Epcot bus will run through BB until 8:45)
To get from BB to ESPN... the only bus that will be running after BB clears will be the Epcot Bus. (If BB isn't clear yet, take the bus to the Boardwalk) Remember, although WS is open until 11pm, the last Epcot bus runs through between 8:45-9:00pm.
When you board the Epcot bus... mention to the driver where you need to go. If you're the only ones on the bus, there's a chance the driver might be able to take you to the Boardwalk directly.
If they are unable to, you might have to walk through Epcot to get to the ESPN club. (I'm assuming you'll have park hoppers, since you've been to the MK already for breakfast)
One thing I might suggest... how badly to you have your heart set on the WinterSummerland courses? Fantasia Gardens has some fun courses, and would cut a lot of transportation out of your day. From TL just take the bus to the Swan, and walk across the street. From FG, walk back to the Swan, and across the bridge to the Boardwalk.
To get back home to the Poly from Boardwalk... if Studios is open, you can go there and catch the bus from there. Another option if it's open, would be to walk through Epcot and catch the Monorail. And a third option (and this works all night) would be to catch the DTD bus, and transfer to the Poly bus at DTD.
