transportation options?

Our plan is to get in to LAX really early on a Tuesday, do our grocery shopping and stay in the DL area til Monday morning when we drive to Carlsbad.

Originally I was going to rent a car from LAX. We'd likely leave from San Diego and return the car there.
But, for the days we'll be at DLR, we won't be doing much travelling. Maybe an extra trip to get groceries.

Is there a better option than renting a car the whole time? We have some food allergies so we'd have to visit both Walmart or Target or where ever, and a health food store.

How about Uber? I admit, I've not used them yet, but I believe they'll be pretty cheap for a quick trip to the store, and you can arrange for another one to pick you up.

I've never used Uber either. Would a service like that be better than a shuttle or something similar?
I should mention we have me and DH and 2 kids, both will be in boosters, which we are bringing with us.

i am interested in this also, usually we drive but we are flying I have looked into some shuttles and they are kinda expensive!

We usually just get a taxi from out hotel to the Vons.. there is a Target on Harbor and a local bus stop and ART stop just out the front of Target.
