We plan to park here during our upcoming trip, however Disneyland's website is only giving parking hours for "parking structures", and that they open only 1 hour before park opens. What are your experiences as to what time the lot actually opens and how the shuttles run? Also how does this work with early entry?

Toy Story and MIckey & Friends should open at the same time each day. Shuttles are constant at opening time as well. Lots will open at least an hour before park opening (regular or MM).

Toy Story is not always open during early entry.
 
Roughly how long does it take to get to the entrance from either car park? Via shuttle? And walking?
 

Shuttle from toy story is less than ten minutes. Walking is too far, never done it.
Tram from mickeys is around five minutes but I've waited for a long time to board tram. Walking I would say less than 15 mins?
 
Handy tip for Toy Story if you get there before opening and are waiting in the line of cars to pay and get in:

Wait at the left side of the entry booth. Almost everyone pulls up to the right, and people just assume that since everyone is in line waiting, that's the only side that will be open. When they open the booth, both sides will be open. I usually cruise past a line of twenty or so cars waiting on the right and pull right up to the left side.
 
I can't help you as far as opening times etc, but we were there in May and that was the first time we had used the parking structure and shuttle service. It was pretty busy the week we were there and it was super easy to get on the shuttle. And we even had a double stroller and never waited more than a few minutes to get on a shuttle.
