Ok, we are just about packed and ready to go.

It says on the Disneyland website that the parking opens one hour before DISNEYLAND opens. And an hour and a half before DISNEYLAND on early entry days. What the heck?!?
Does that mean 5:30am when the park opens at 7?

Also, what app is everyone using once in the parks for wait times? Is there one more accurate thank another?

If it's on the Disneyland website then it should be correct.
Disneyland Official App since it gives you wait times and Fastpass Return times.
It is not always 100% accurate but close enough.

As others have said, I would recommend using the official Disneyland app. I've found that it's the most "reliable" in that it's using the same data that the sign boards in the parks are using. There is a bit of a lag between when information at the FP kiosks change and when the app updates (e.g., the App said Space FP were for 1:00 pm to 2:00 pm, but the sign board said 1:15 pm to 2:15 pm and it took about 5 minutes for the app to update). It also has the hours, character meet and greet schedules, photopass, etc. I've pretty much stopped using any of the other apps (MouseWait, Disneyland Times, etc.) because the official app doesn't rely on users in the park to update the wait/FP time information.

Same here. It has all the information in one place. Makes it very easy.

I use both the official Disneyland app and one called Disneyland wait times (has a purple app icon). I find that the Disneyland wait times app is pretty accurate and is very easy to use. It does only give you the ride wait times and nothing else.

I use MouseWait for times since it also adds an expected wait time to the posted wait times (which are often longer than reality). Yes, as figment pointed out, it does depend on its users to update the information but a lot of people do use it at Disneyland (at WDW I use the official app).

I go to the parks quite frequently and have found the official app to be fairly reliable. Wait times are less than posted and wait times and fast pass availability may change as you get to some of the bigger rides with longer waits (like Space or RSR), but that is expected. I have also waited less on many rides due with fast pass (wait times are inflated to guess the number of fast pass riders).

I would not use or recommend multiple apps as that would personally drive me crazy.
