I went to book my towncar service to the port with FL Tours and the reservationist said the earliest they can pick me up is 10:00. So how can I get to the port earlier with a town car or can't I?

Most private car services won't book a trip that will get them to the port before 10:30-11:00. I think it has to do with the fees they have to pay to access the port.
As mentioned, the terminal at Port Canaveral doesn't open until 10:30 (and maybe 11am for the Magic or Wonder). Boarding won't begin until 11:15-11:30. It has been reported that most limo/car services will not plan for arrival prior to 11am, which is the official opening time. If you wish to arrive earlier, your best options are either DCL transfers from MCO (first bus often arrives prior to 10:30am) or a car rental. There isn't really a lot of reason to arrive particularly early unless you are trying for a coveted upgrade (which may or may not be available). Arriving around 12-12:30 is actually a great time because the early crowds have boarded and most buses from the resorts haven't arrived yet, leaving the terminal nearly empty and you may be able to walk-on as soon as you finish check-in.
