Is there a lounge that we can get food from without having a reservation?

In normal times, yes. In recent pandemic times, they removed quite a few seats due to distancing requirements. Not sure of current status...

Are you able to just go to the lounge to grab a drink? Was thinking of checking out the hotel on the Skyliner.

We have dined there twice recently - once for dinner and once for breakfast. Both times, they were seating walk-ups in the bar area.
