Tons of leftover grilled onions! Any recipes?

We ended up with WAY too many leftover grilled onions and peppers after having fajitas over the weekend. I hate the thought of throwing them out, but all the fajita meat is gone, and I'm out of ideas for what else to cook with all these onions.

Anyone have any suggestions? The onions were grilled with a little olive oil, and that was it.

If its that much, I would freeze them and use them with fajitas in a week or so!
 
I add them to pasta sauce-you could freeze that and use later. :)
 
in fried potatoes.

If you don't want fried foods then do a casserole dish and include them in it.
 
Lots of things:

pasta sauce
omelets
fried potatoes
steak topping
quiche
rice/couscous
butter noodles
included in a bread/roll recipe
tacos
add it to other things for a soup stock/base
 
I would freeze them in lots of small freezer bags for future pasta sauce, meat loaf, chili, add to eggs etc.
 
Absolutely freeze them for future use in sauces and the like that will be heated.
 
I make extra on purpose! My favorite is to make a frittatas with goat cheese and the leftover peppers and onions. I also use them as a pizza topping. The possibilities are endless. :thumbsup2
 
French onion soup! Super simple to make.
 
A pizza place near me offers a grilled veggie pizza that's very good, with mozzarella and some ricotta cheeses.

Our cafeteria at work offers a grilled veggie wrap that is delicious! They start with onions and peppers, spread a sundried tomato pesto or bruschetta on the sandwich wrap and top with a slice or two of provolone cheese. It's put in the panini press to toast the wrap and melt the cheese. Now I'm hungry for that lunch special, lol.

The veggies often include grilled zucchini or eggplant. I think they're using up leftovers from the salad bar, to be honest, lol. It's tasty and fairly healthy, so who cares?
 
Nothing better than peppers/onions and eggs on a nice hardroll.

You can definately freeze them in portions for later use.
 
Mix up your onions with an equal measure of grated swiss and and equal measure of mayonnaise.

Throw in the oven at 350 for about 20 - 25 minutes.

Dip with your fave crackers or tortilla chips.
