Toddler meals - need ideas!

I have this posted on the family board, but figured I may get some good responses here as well.

I'm a picky eater, so its really hard for me to come up with simple, quick, healthy, toddler-friends meals for my DDs. Normally, DH & I would order out, or I'd make something simple, chicken, pork chops, etc w/veggies. Girls eat the same veggies, some meat, rolls, etc. Lately, my DH has changed jobs and not home for dinner during the week. It seems pointless for me to make 'big' meals when I know my DDs aren't going to eat them, and I don't really need them. (I'd be happy eating pizza every night). SO, I'm getting tired of pasta, grilled cheese, mac & cheese, pizza, rice & veggies. Those are the main 'staples' in our house. I need some new ideas! DDs are ages 4.5 and 2. They will be willing to try some new things sometimes, but are generally kindof picky as well. Thanks for any suggestions!
 
How about soups... both of my little ones could eat it daily. I made a pot of homemade soup (which was a first for me) over the weekend and froze small portions for them.

What I have been doing this week since my older 2 have sports and hubby works 2 jobs is make one pot meals.. I try to start it earlier in the day so he can eat at 3 between jobs and kids can eat before practice.
 
some of my kids favorites are

different pastas and sauces, pastina w/butter, meatballs, chicken sausage, quesadillas ( I use cheese, chicken or spinach), meatloaf, gyros, grilled chicken, cous cous ( they make a huge mess with that one), turkey and cheese rollups
 
My Dh works afternoons so it is just DD (3) and I for dinner every night. I hate to make a big meal when we are not going to eat it. It is kind of hard to cook for just the two of us when it is easier to just order out.
Here are some of the things we make:

-Tuna salad on crackers with cheese cubes and carrots
-Mini pizzas made on refridgerated biscuits
-Angel hair Pastaroni with herbs mixed with a bag of frozen broccoli
-Homemade chicken nuggets (Shake n bake)
-Veggie stir fry
-Chef salad
-Rotisserie Chicken (from grocery store) usually enough leftovers for chicken sandwiches for next day or soup
-Grilled ham and cheese
-Steamed veggies over rice with cheese
-Lunchmeat with crackers and cheese
-Scrambled eggs and toast
-Mini hamburgers on little buns
-Soup
-Waffles

She likes to help in the kitchen a lot so I am always looking for things she can help make. Neither one of us are big meat eaters so we can get by with a lot of veggie meals.

A quick meal I've been eating lately that is tasty, is a tortilla, put some sliced thin honey baked ham and cheddar cheese in the middle, and microwave or heat in the oven.

It's very easy!
 
A quesidilla with grated cheese, and either microwave or bake until the cheese is melted.
