You can offer something uniform and come up with a signature drink if you want. The cost depends on what you are toasting with. We just had everyone toast with what they were already drinking as we had an open bar and signature cocktails, I thought it was silly to have to pay per drink on top of that when a lot of people don't even drink more than a few sips.
However, we needed to meet our food and beverage minimum, so we added a cider toast. But you can request that the serve the glasses half-full, which saves money!

Excellent idea! Now to meet your food and beverage minimum does only your food at your reception count? Or can the dessert party be included? I know it can be included in your day's costs.... but what about food/bev mins?
All food and beverage that day meets Disney's per-person minimums of $75/$100/$125. But only food at each venue counts toward that particular venue's food and beverage minimum (like if you're at Ariel's and it has a $1,000 f&b minimum, only food you eat there counts toward that.)
