If you don't care if you have burgers and pizza all the time, don't worry about it.
If you wan't some variety and unique choices, review some of the CS menus to see what looks good. You don't have to PLAN, per se. But, it is always nice to be familiar with some of the menus so you feel you have more options and choice.

Columbia Harbor House has Fish (kind of long john silvers)

Cantina Eddie's has hot italian sandwiches

yak & yeti counter option has asian cuisine
picnic in the park has various options (kind of like Boston Market meals) and a keepsake canvas bag. Order in the morning for later pick up
EPCOT the most counter service variety.
Each of the countries has some counterservice that is unique to that type of food.
Good ones are Tangeine Cafe in Morocco
Cantina in Mexico
Pastry shop in France
A lot of the Resorts have some unique counter service options as well
POFQ has beignets for dessert or snacks
The Polynesian has stir fried noodles, flatbreads, pulled pork and dole whips
Down Town Disney has excellent choices as well
Wolfgang Puck Express is notorious for Quality and value and has lots of menu options including spaghetti and meatballs with organic beef, amazing salads, 4 cheese mac and cheese, and of course gourmet pizza
Earl of Sandwich also has delicious sandwiches!
