Disney has what is called "Photopass" which is a card the on site photographers will give you. When you get your pic taken by a photopass photographer, they swipe your card and then you can look at your pics at an on site photo station or when you get home, on your own computer. You can order prints right there or within a certain time frame after arriving home. You can see what they offer here:

I want to add though that it's still totally worth taking your own cameras because there's tons of photo ops around the parks and the Disney photographers are not always available when you want a picture. They also have certain areas they take pictures in, not always where you want your picture taken necessarily (you might choose to take more candid shots or off the beaten path types of photos, plus they won't be on rides the the Safari at AK for example, where you might want to take some pictures).
Remember to give the Disney photopass photographer your camera too and they will also snap a pic with that as well.
As far as the camcorder goes, we own one but we don't use it nearly as much as we thought we would. And it's just one more thing to lug around the parks. If you're really into taking video then bring it otherwise you might want to just leave it at home.
