Tipping on DDP/KTTW Question

If I have my credit card linked to my KTTW card and am on the DDP, when it is time to pay the tip at a TS restaurant, do I get to write in how much of a tip to leave (like at a typical restaurant outside of Disney), or do they automatically run a certain percentage through? We are a party of two.

I am not sure I'm comfortable with them automatically taking a certain percentage and billing it to my room; I prefer to write in my own tip (especially for amazing servers) so I know exactly what charges are being billed to my room.
