We are going to the chef's table in 2 weeks. Yay! :cool1: But we are new to this kind of dining...

How much do we tip and to whom? We are getting both the dinner ($160)and the wine pairing ($60). What percentage do we tip? 15%? 20%? Do we tip on wine?

Do we tip the wine steward separately from the waiter?

Any advice would be appreciated! Thanks!

you should tip at least 20% on the entire bill - you don't need to tip the sommelier / maitre'd unless he's arranged a special request for your evening.

we actually tipped at about 35% when we were there in May - the service and the food warranted it in our opinion.

I agree; it's not like Windows on the World where they had a separate place to tip the wine steward. At V&A's, there's just 1 line for the tip, and it should be at least 20%, but more likely 25-30%.

Cheers!
