We're eating at Palo on the last night of our cruise and planning on eating breakfast at Shutters in the morning. So when can I hand out my tip envelopes.

I hope you are planning to eat breakfast at Cabanas not Shutters - or are you planning on being in line for photos for awhile? 😊

If you are just giving them the tip receipt (charged their tips to your onboard account), you don't even need to give them that - they will automatically receive your tips. But if you want to add cash, you'll want to hand them out personally so you are sure they get to the right people. If you are having Palo early, I'd stop in the dining room after (even if it isn't your normal seating time) or vice versa if your Palo time is later. You could stop in the restaurant the last morning on your way out but I find that last morning is a bit crazy and you might have a hard time catching up with your serving team.
 
As previous poster said, if you aren’t adding extra in cash you don’t need to hand them anything, they will get it automatically.

If you want to add extra but don’t want to deal with handing them the envelope, I would go to guest services and have the extra amounts charged to your onboard account. We did this last cruise and it was much easier than having to carry all that extra cash.

This would work. Be aware that tip envelopes may not be delivered before your last MDR dinner. If you want to use the official tip envelope, you could stop by Guest Services some time before dinner and ask if you could get a printout of your gratuities and envelopes for the dining room staff. As noted above, though, if you've charged to gratuities to your account, it's not necessary to use the official envelopes and statements -- the servers will get the designated amount in their pay even without the receipt.
