We are on day two of being home -- I wonder if we will be out tomorrow again since Glenn Burns (my go-to weatherman) said things won't really thaw out until the weekend.

Did you see the footage of 10th Street as a complete sheet of ice? Crazy! :eek:

Unfortunately I can't post pictures from my net book because there isn't enough space :( We had a great time outside yesterday. Tink wasn't able to make a snow angel because the ground had iced over. But we did start on a snow man, we have to finish it today because that is just a lot of work. That was my cardio for the day since I couldn't get to the gym. :laughing:

Yes I saw 10th street all frozen, today the weatherman said "unless you play for the Atlanta Thrashers, stay in the house!!!" :rotfl2: Since I don't play hockey, I stayed home.
 
Hey guys! How is everything going? I am getting cabin fever over here. I don't know if you've heard but Georgia is under a deep freeze. But you will read about that in a different post.

Today is my weigh in day. I weigh myself once a week, well I only write it down once a week. I don't know about you but "weighing in" is a little stressful.:scared1: So I stepped on the scale and closed my eyes REALLY tight! I could feel my heart beating faster and harder, I slowly opened my eyes and... I lost 5 more pounds!:cool1: Go Shan, Go Shan, Go Shan!!!! :cheer2: That is 7 pounds only 43 more to go! So how is everyone else doing with their weight loss??

I just need to be consistent, I have confession though... I had McDonald's for lunch today.:headache: I allow myself one cheat meal a week I guess that will have to be it.

So I titled this post Yum Yum because I have a great recipe to share with you all!

It is an Egg White Scramble

1/2 cup chopped peppers and onions (I use recipe beginnings 3 pepper blend from the frozen food section. It is really quick and easy!)

6 tbls of egg white ( I use egg beaters)

1 tbls of Salsa

a pinch of garlic salt and pepper to taste

non stick spray and small frying pan

Pre-heat the frying pan on medium heat and coat the pan with non stick cooking spray. Place veggies in the pan, add garlic salt and pepper, then let cook until they are tender. Stir veggies as they cook. (If you use frozen veggies cook them frozen you may need to drain the excess water. Pour the egg white in the pan, right on top of the veggies. Let the egg white settle at the bottom of the pan and get opaque before you scramble. Scramble the egg white and ta da you're done! Transfer to your plate and add the salsa on top (completely optional) A little grated low fat cheddar cheese is also good on top.

This little meal is great, filling and its less than 100 calories! Yes I said less than 100 calories. If you are on the go you can throw it in a tortilla and wrap it up! The tortilla adds between 80 to 100 calories by itself so I try to stay away from it. Let me know if you try the recipe and tell me what you think about it!
 


As many of you have heard Georgia is experiencing a deep freeze right now. It reminds me of the movie The Day After Tomorrow. (You know the movie where the whole Northern Hemisphere froze over.) When I look out of my window I feel like I am in the a Tundra. Being from the north I never understood why everything shuts down in the south for a little bit of snow or ice. Well now I see why, we were TOTALLY unprepared! I saw on the news tonight that the county I work for has only 2 plows and 4 salt trucks to cover the entire county.:confused3 That makes no sense to me!

Well after being cooped up in the house for 3 days I began to feel like :dance3: mixed with :eek:.. I had to break loose. I looked out of my window and for the first time I could actually see the street. I threw some shoes on Tink and we headed out of the door. I park in the garage so I noticed there was some ice on my driveway on my way out but I didnt pay much attention to how much ice there was. So off we went...I went to the Redbox to return some movies and I ended up renting 5 more (No school tomorrow either) and we stopped at McDonalds.


When I got home I notice my driveway was was frozen solid. I go up (it has an incline) the driveway the normal way, thinking the weight from the car will crack the ice and connect the tires with the ground for traction, but the ice told me I was wrong. I start slipping backwards to the bottom of the driveway. I survey my surroundings and figure out a way into the garage.:idea:

Attempt #2: I pull may car into the street (no ice there) I line my car up with the garage Rev up and go... I make it all the way up to about 2 feet away from the garage entrance. Darn...my car starts sliding back even though my cars gear is in drive! LOL:rotfl:
The entire time Tink is in the back seat commentating
"Lets try again mommy"

Attempt #3: I try again and stop in the same place... slide back and my car starts to spin out in the drive way! LMAO :rotfl2:By this time Im getting angry like come on Shan you are a better driver than this. Being the New Yorker I am I fix the car and Im like Im gonna get in this d@*n garage.

Attempt #4 So I back up and try again for a third time... I stop in the same place. This time I throw the car in park. Get out and grab some card board to put under my tires. Im like RIGHT at the garage door. Well I thought I had rear wheel drive... and I place the card board under the rear tires.. I learned today I have forward wheel drive. So I get out the car to move the card board to the front tires. Just then the wind blows and sends my cardboard flying into the street. I ice skate down my driveway to get the card board. And I throw the cardboard back in the garage.

Determined...Im say, Im gonna get this... and the fourth time was the charm. I just gunned it from the street and got in the garage. :cool1:

The whole ordeal took about 30 minutes. Even though, when I sat down my food was cold, I still felt victorious... Shan 1 Ice 0!!!!

Moral of the story:
1. Always know whether you have front or back wheel drive when driving on the ice.:drive:
2. The ice is not your friend :hippie:
3. When there is snow and ice in the south, just stay home, which I will be doing tomorrow!

I would post pictures of my driveway but as you all know my regular computer is down :badpc: so just pretend there are some pictures right here!

Staff is reporting for us today, but the kids have another day off. I am not looking forward to driving the backroads this morning. :sad2:

What an ordeal getting into the garage! I would have given up after the first two tries and parked on the street! :laughing: Glad the fourth time of trying worked. :goodvibes

This is my first dis post ever! I've been lurking for awhile and your thread was too hard to resist. I'm a teacher as well- 3rd/4th multiage in Chicago. I've taught 1st in the past (as well as 2nd and 5th!). I have recently lost 28 lbs and am looking to lose about 40 more! One website I'd recommend is hungry girl.com. She is based off of weight watchers, but not weight watchers sponsored. She lists calorie amounts on stuff. One thing she specializes in is egg recipes! She lists tons of variations on the recipe you posted. You'd probably love it! I'm heading to disney world in June and am so excited. Perhaps I'll make a pre trip report one day soon. That egg recipe does sound good, but I am completely useless in the kitchen. :rotfl: I may have to ask my fiance to read it and do it for me. :laughing:

Good job on the weight loss. I really need to get it together before my June trip! UGH! LOL
 
Hilarious Ice story :). Here in Texas we had ice issues and I have to tell you it is never fun. It seems that I had that SAME incident last year and had to just give up and park in the front of my house because of my inclined driveway. LOL...

I am like MadiMouse, I need to get it in gear for my weight loss for June. The date is coming up so much faster than I thought.

Welcome to DIS!! Thank your for sending me to hungry girl! I really love the website it is a useful tool! Congratulations on losing those 28 lbs. How long did it take you? You should definitely make a pre-trip report they are fun. It also keeps me excited about going to Disney.

Can you believe February is almost here already??? One month in 2011 is already gone! Im going to keep you motivated. I lost my motivation last week. I had a brief lapse but I'm back on top of it!

BTW: I talked to my mom about going on a Disney cruise.. the whole no casino thing was a deal breaker. :laughing:

I am glad the ice is gone too. They are saying we may get some more on Thursday! I hope everyone is prepared this time.

I can't believe it has been 10 days since my last update. I am soooooo sorry! This week seemed to just fly by. Last week at school was a breeze. I definitely needed that extra week off. Thank you mother nature! :worship: I have been having technology difficulties lately. Lets see my stereo has died, my GPS has died, and you already know about my computer. On a brighter note: I have finally found a computer that I like and it is affordable. I am going to go and pick it up today :cool1: I could buy it online but I like having my things immediately, I don't like having to wait for it to arrive. So keep you fingers crossed they have it in store!

On to the update: I added some and changed some of my ADR's. (well I attempted to) but when I went online it said that most of the places I wanted are full. I guess I have to keep checking.:confused3 I took you guys advice and I changed some of my lunches to dinners and we will grab a CS for lunch. This way I don't feel like I am eating my WHOLE trip! I will post an updated dining plan later.

Oh! Good news I will have one more person on the trip. Tink's father (Grumpy) will be joining us on the trip now! He and I are not together but we still have a great relationship. This will be his first trip to Disney ever! He is not a Disney fan AT all. He doesn't understand my fascination with the World! Well recently he took a trip to Orlando for work. His resort was directly across the street from DTD. He called me on the first day of his conference happy that he could see Epcot from his hotel room. (sounds like someone is getting excited!) When he had some free time he went over to DTD have dinner. Of course being the Disney addict I am I gave him places to go check out, hoping he would catch a slight Disney fever. Well I am happy to say it worked. Later that evening I received a text saying " I hate to admit it but I am really excited about our trip in May!" :wizard: Plan successful!

Grumpy is a vegetarian right now it changes depending on his mood! (Well he eats seafood but not beef chicken or pork) this will throw a wrench in some of my dining plans. Does Boma serve seafood?
 
Yeay for Grumpy getting excited about the trip! Yes, Boma does serve seafood -- there is always some sort of fish on the meat sideboard. I love their salmon.

Last week did fly by! This week may not go as fast. :(
