After four nights in Paris and three nights in Disneyland Paris we'll be flying to Belfast. I was really happy to see that the train to the airport runs so frequently and only takes about 10 minutes. I have a 12:40 p.m. easyjet flight to Belfast. It's the only one that day. Do you think I'd be OK taking a 9 a.m. train (two adults traveling who have minimal luggage they can handle on their own). Thanks so much. Oh and timeframe is a Friday mid September.

Yes, you'll be fine.

Normally I leave about 2 hours before. But with all the chaos at (European) airports this summer, extra time never hurts.
@mikalkwin are you still in France (or are you living in Germany now?) and can you tell the situation at CDG?

I live in Germany but my whole family is in France. There are issues in all the main airports Amsterdam, Heathrow, CDG and to a lesser extent FRA (but for different reasons depending on the airport).

Basically, airports are warning NOT to come too early because it actually makes it worse. For CDG, the current recommendation is to be thre 1h30 for domestic or intra-EU flights. Between 2 to 3 hours before an international medium-haul flight and 3 hours for long-haul (but no more than that).
