You can enjoy either in as little as one hour up to as much as two.
If you are trying to move on the faster side, tell the host/hostess when you check in. Also tell your server. Ask for advice on your orders to make sure you don't pick something that will push dinner too long. For instance, a souffle has to be made to order and takes a while. If you want one for dessert, order it when you order your entree.
Two hours is a long time for a small party. If your a table for four or less, 1:30 to 1:45 will probably do it. A big party will take longer because of staging the entrees. Also be prepared for a longer wait for a large party. Particularly at Cali Grill.
Whatever your plans, consider confirming your reservation directly with the venue the evening before or morning of your meal and provide any timing and other requests you may have. My experience is that in general they work hard at the signature restaurants to personalize dining experiences and make sure they are special. Particularly if asked kindly. If you are staying concierge, your concierge host will handle these communications for you.
